Sesame Soy Roasted Cabbage

This recipe is a quick and delicious way to eat more cabbage! Cabbage is high fiber and usually very affordable. Purple cabbage is packed with antioxidants and vitamins. I like this recipe as a side dish with some rice and stir fried tofu or other protein. It is also great to add to noodles. If you enjoy the instant noodles with the sauce packet, like the Trader Joes Knife Cut Noodles or the Momokufu Sesame Noodles, this is a great addition to those noodles to add more fiber and make the meal more filling. I also love this cabbage cold. It is great for meal prep because you can make them and save then in the fridge to add to salads, noodles, or as a quick low fat high fiber snack.

Ingredients
  

  • 1 purple cabbage
  • 4 tbsp soy sauce
  • 4 tbsp maple syrup
  • 2 tbsp toasted sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp tuxedo sesame seeds

Equipment

  • half sheet tray

Method
 

  1. Preheat the oven to 400 F. Shred the cabbage.
  2. Combine the soy sauce, maple syrup, sesame oil, rice vinegar and sesame seeds to make the roasting sauce. Place the shredded cabbage on a half sheet tray and coat with the sauce.
  3. Roast on 400 F for 20 minutes until the cabbage is soft and the sauce has thickened a bit on the pan.
