Maple Toasted Coconut Flakes

This is a quick, delicious topping for yogurt or ice cream. I also just like to snack on it like granola. The almonds and hemp hearts add a little more protein as well. Make sure to let it cool before breaking it apart. The smaller the pieces the better for toppings. The larger the pieces the better for snacking.

Ingredients
  

  • 1 cup coconut flakes
  • 1/2 cup sliced almonds
  • 2 tbsp hemp hearts (optional)
  • 4 tbsp maple syrup

Equipment

  • Half Sheet Pan

Method
 

  1. Preheat the oven to 350 F.
  2. Line the half sheet tray with parchment paper. Measure all the ingredients onto the sheet tray.
  3. Drizzle over the maple syrup and toss everything together to coat.
  4. place in oven for 10-15 minutes. I recommend flipping the coconut flakes halfway.
  5. Watch carefully. It is done when the coconut flakes are browned. It is easy to burn so check every 5 minutes.
  6. Let cool before breaking apart into chucks and using as a toping for yogurts or ice cream. I also like to just snack on it when you want a sweet treat.
