Method
- I recommend boiling eggs ahead of time and making sure they are chilled before peeling and slicing. I like to start my hard boiled eggs in a pan with cold water and bring to a boil for 3 minutes then turn off the heat and cover. Allow the eggs to sit until the water is warm to touch (about 10 minutes). Then drain off the warm water and fill the pan with cold water and handful of ice to start to chill the eggs. I will store in the fridge before making the stuffed eggs. Ideally overnight.

- Slice the eggs in half, drop the yolks into a bowl and add the sesame oil, vinegar, sriracha and mix well until it is creamy, bright yellow and there are no lumps of yolk. Then add 2/3 of the scallions and fold them in. Reserve the rest of the scallions for topping.

- Drop about a tbsp of the mixture in each half egg white. Then top with the remaining scallions and the sesame seeds.

Sesame Dressing
- I like to combine the ingredients in a jar and shake to combine. Then spoon over torn lettuce and add some cherry tomatoes and 3-4 of the stuffed eggs over top.
